Daring Snacks Abound At The State Fair: Peanut Butter Pickles and Lemon Wafer Ice Cream

As the North Carolina State Fair opens today, some of the concessions are bound to draw as many thrill-seekers as the rides. 

The fair website boasts a Food and Ride Finder that features 26 new menu items, from Carolina Crab Bites to Deep Fried Klondike Bars to S'moreos Specialty Apples.

Scott Strother owns S-2 Concessions which will present two new deep-fried items this year. One is a bacon-wrapped jumbo Tootsie Roll. The other: A peanut butter pickle.

"We take a Mt. Olive dill pickle. We slice it in half, core out the center, and then we load it up with creamy peanut butter. And then we put it in a batter and we deep fry it," Strother says. "And we can top it with chocolate and powdered sugar and then out the window it goes."

Strother says the item is bound to be a hit with pickle-lovers.

The Howling Cow dairy bar will unveil a new ice cream flavor today. The whole operation is based at North Carolina State University where scientists, students, and farmers grow the crops for 400 cows. They then milk the cows and  churn the ice cream for sale at three campus shops.

The state fair booth will have about 15 flavors, including the light and crunchy new Lemon Wafer ice cream, says Howling Cow's business manager Carl Hollifield. Old favorites will remain on the menu as well. 

"Our most popular flavor every year is Wolf Tracks. And that's our version of a Moose Tracks. It's vanilla with a fudge swirl and chocolate peanut butter cups."

 The booth at the State Fair is a fundraiser to help send students from State's Food Science Club to professional meetings, Hollifield says.
